Beef & Sausage Dip
3/4 lb ground beef
1/4 pork sausage
1 C ketchup
4 t chili powder
3 t sweet paprika
2 - 15 ounce kidney beans undrained
2 C shredded cheddar cheese
1 C sliced black olives
1/2 C chopped green onions.
Preheat oven to 350.. Brown beef and sausage and onion in a
medium skillet Drain excess fat. Add ketchup,chili powder, paprika,
and beans . Mix well.
Place mixture in a 13 x 9 inch baking dish. Bake
15 minutes. Sprinkle cheese, olives and green onions on top. Bake an
additional 5-10 minutes until cheese melts. Serve with your favorite
chips..
Cucumber Sauce..
1 Container Plain Yogurt (8 ounces)
1-1 ounce Dry Ranch salad dressing
1 Large Cucumber peeled -seeded - and chopped small
Mix together Let sit 2 hours.. serve on salads- burgers-
chicken sandwiches
Fresh Cucumber Dip
I serve this with pita bread or pita chips
2 Cucumbers peeled and diced
1 C non fat sour cream
1 C yogurt
1/2 C greens onions diced
2 T fresh mint
2 T fresh dill
salt & pepper to taste.
Mix and chill well
Fresh Pineapple Salsa Salad
1 fresh ripe pineapple= peeled cored and cut into small pieces
Juice from 2 Limes
1/3 C red onion chopped
1/3 C green poblano pepper chopped
1/3 C red bell pepper chopped
1/2 C cup fresh cilantro chopped
4 fresh serrano peppers seeded and chopped
2 green onions sliced
1/4 C maple syrup
In a large bowl mix all ingredients and then chill.. Keep
refrigerated until rady to serve. Goes well with fish. meat or just with
chips...
Mary Rose Herb Farm Garden Salsa
1/2 sweet onion
6 Fresh tomatoes
1/2 C green pepper or red , orange or yellow
2 t olive oil
1/2 C fresh cilantro
1/2 t lime juice
3 Fresh serrano peppers
2 t red wine vinegar
A fresh easy way to use your fresh tomatoes Mix and
Match different colors, and varieties.. Keep in the refrigerator
Place onion, peppers and cilantro into a food processor.
Pulse until finely chopped.. Add tomatoes and pulse just a few times until they
are coarsely chopped. Add olive oil, red wine vinegar , and lime juice..
Oatmeal Rolls
1 Cup of old fashion oatmeal
2/3 C of unsweetened applesauce
3 T soft margarine
1 T stevia
2 Cups of Boiling water
1 1/2 t salt
2 packages of yeast dissolved in 1/3 C warm water
5 Cups of all purpose flour
In a large bowl pour the boiling water over th oats and
margarine . Stir and cool to lukewarm. Add applesauce , salt and dissolved yeast
to oatmeal mixture. Knead in the flour ; 1 cup at a time.. Let dough rise
for 1 hour in a warm place. Punch down. Form into balls and place in a
greased 9 X 13 baking dish. Allow to rise for 20 minutes. Bake in a 350
oven for 20-25 minutes until brown//

White Bean Dip with Pita Crisps
| 4 Pita Bread rounds |
1-15 ounce can of white beans Italian is best |
| 1 T olive oil |
2 cloves of garlic, diced |
| 2 t oregano dried or fresh |
2 T extra -extra virgin olive oil |
| 1 t salt |
Juice of 1 lemon |
| 1/2 t freshly ground pepper |
1 t cumin |
Preheat oven to 350 degrees. Place pita bread on baking sheet
and brush with olive oil. Sprinkle with oregano, salt and pepper, and bake
until crispy and golden about 10 minutes. Cool and break into pieces.
Drain beans and set aside liquid. In food processor,
combine drained beans and remaining ingredients. Process until smooth; for
smoother texture, add reserved liquid. Serve with pita crisps.
