Apple Gingerbread Cobbler

5 Large Apple (I love Jonathans)

1 T fresh lemon juice

1/2 C brown sugar

1/2 C apple cider

1 t cinnamon

1/2 t fresh grated ginger

1 T tapioca with 3 T apple cider

Topping

1 C whole wheat flour

1/2 t baking soda

1/2 t baking powder

1 1/4 t cinnamon

1 t fresh ground ginger

1/4 C brown sugar

 1/2 C non fat milk

1/4 C Indiana sorghum or molasses

2 T butter melted

Peel and core apples . Cut into slices . Combine with lemon juice, sugar, apple cider, cinnamon and ginger in a saucepan.  Bring to a boil.  simmer 3 minutes.. whisk in milk, sorghum, and butter. 

Spoon the hot filling into a 2 quart baking dish.  Spoon the topping over the apples.  Bake in a 350 degree oven  30 minutes.  Serve with whip cream, or ice cream...

Easy Soft Chocolate Chip Cookies

2 eggs

1/3 cup of water

1/4 C margarine or butter

1 C crunchy peanut butter

1 Pkg yellow cake mix

1/2 package of chocolate chips

Beat eggs water margarine, peanut butter and half cake mix until smooth.  Stir in remaining mix and chips.. Bake on increased cookie sheets at 350 for 8-10 minutes..  Yields 3 dozen

Brickle Bit Cookies

1 Yellow cake mix with pudding in the box

1/2 cup canola oil or soy oil

]2 eggs

1 T pure vanilla extract

1 Cup flaked coconut

1 Cup chopped pecans

1 package 10 ounce Heath Bits of Brickle candy (almond toffee bits)

heat oven to 350 degrees Line cookie sheet with parchment paper.

Mix together the oil, eggs, and vanilla in a large bowl.. Add cake mix, coconut, pecans, and brickle bits.  Stir until combined well.. Drop by the Tablespoon about 2 inches apart on the prepared cookie sheet .   Bake 12 minutes at 350 degrees. Cool on pan about 2 minutes remove to cookie wire rack and let the cookies cool thoroughly. 

Baked Bananas and Blueberries

6 bananas, peeled and cut in half lengthwise

3/4 Cup of brown sugar

1 cup blueberries

1 C orange Juice

2 T lemon juice

butter

sour cream or vanilla yogurt  for topping

Put bananas in a buttered baking dish. Sprinkle blueberries over the  bananas and then the brown sugar .  Pour orange juice and lemon juice over all. Dot with butter.  Bake in 350 degree oven for 20 minutes .. serve hot, topped with sour cream or vanilla yogurt.. Serves 6

 

PINEAPPLE COCONUT POUND CAKE

 

1- (18.25) YELLOW CAKE MIX ORGANIC (MADE BY HAIN'S

1-(8 OZ ) CAN CRUSHED PINEAPPLE- DO NOT DRAIN!

4 EGGS

1 CUP FAT FREE SOUR CREAM

1/3 CUP SUNFLOWER OIL

1/3 CUP OF FLAKED COCONUT

 HEAT OVEN TO 350 DEGREES. GREASE AND FLOUR A LARGE BUNDT PAN OR TUBE PAN. IN A LARGE MIXING BOWL ON LOW SPEED, MIX ALL INGREDIENTS UNTIL COMBINED AND THEN BEAT ON MEDIUM SPEED FOR ABOUT 3 MINUTES.  POUR INTO PREPARED PAN AND BAKE ABOUT 50 MINUTES UNTIL IT TESTS DONE.  COOL FOR 10 MINUTES AND THEN TURN OUT ONTO CAKE PLATE. DUST WITH FRESH STEVIA LEAVES .. DELICIOUS AND MOIST POUND CAKE...

I SERVE WITH FRESH MANGO SLICES AND A TABLESPOON OF WHIPPED CREAM.
