Sweet Potato Pancakes

 

1 1/2 Cups of all-purpose flour

1 1/2 Cups of milk

2 Cups of sweet potatoes (peeled cooked and mashed)

1/4 Cup of melted butter

3 large eggs beaten well

3 t baking powder

1 t salt

1/2 fresh ground nutmeg

1 t pure vanilla extract

Allow potatoes to cool before making batter

In a large bowl sift together flour, baking powder, salt, and nutmeg.

In a separate bowl combine milk, eggs, butter, and sweet potatoes,  Combine the 2 mixtures until dry ingredients are just moistened.  Allow batter to set at least 10 minutes.  Heat a griddle and lightly butter .  Drop[ batter by heaping T turning once until pancakes are browned on both sides.  Serve with PURE maple syrup .

Great beginning for a fall day!

 

Grilled Chili Veggie Chicken

1 T olive oil

1/2 t chili powder

1/2 t cumin

1/4 t cayenne pepper

1/2 t garlic powder

1/2 t chopped cilantro

1/4 t fresh ground black pepper. 

6 skinless boneless chicken breast halves.

2 T finely chopped red onion

2 medium tomatoes seeded and diced

1/2 medium green pepper cut into strips

1 C cheddar cheese shredded

Combine olive oil, all spices and cilantro in a small bowl.. Arrange chicken in a shallow pan and pour marinade over top.  Turn a few times to coat evenly.  Let stand 15 minutes

Preheat oven top 400. Line a baking pan with aluminum foil.  Top with onion tomato and bell pepper.  Bake uncovered 20 minutes until chicken is no longer pink.  Remove from onion add some cheese and bake until cheese melts   Drizzle drippings over chicken..

serve with a salad.. Yummy!

Thai Pork Tenderloin

Ingredients

1 T soy oil

1 large bunch of green onions

1 T each of fresh garlic and ginger

2 T Fish Sauce

1 T Red Curry Sauce

1 T brown sugar

1/2 C fresh lime juice

1 small handful of fresh mint (I use Kentucky mint)

2 -3 lb fresh pork tenderloin'

In a skillet heat oil over medium heat.. Chop onions and add white parts to the skillet (reserve the green tops)  Add garlic and ginger ... Stir cook until the mixture is soft.. Add the fish sauce the curry sauce and brown sugar.. Stir and cook until well dissolved and fragrant... Your kitchen will smell wonderful! Cool the ingredients,,

Add 1/2 cup of mint and 1/4 cup of lime juice.. Sit aside in an zip lock bag. 

add meat to the marinade in the bag..

Marinade over night... Preheat grill and grill tenderloin until meat thermometer registers 150 

Put the marinade in a saucepan and simmer 6 minutes on stove.. strain through a fine sieve..

Slice tenderloin and pour reserved sauce over meat.. Sprinkle with remaining mint .. serve with the cucumber salad.. Taste like Thailand..

Almond Baked Pears

2 t + 1 T olive oil

2 pears washed halved lengthwise, core scooped out.

2 T flour

2 T brown sugar

1/4 t grated fresh nutmeg

1 T sliced almonds

Vanilla yogurt

Preheat oven to 350. Coat a 13 X 9 baking dish with 2 t olive oil.  Arrange pears cut side down in baking dish bake 25 minutes.  Combine the flour, brown sugar, and grated nutmeg in a bowl.. drizzle with remaining olive oil and blend until crumbly.  Add the almonds.  Turn the baked pears cut side up.  Sprinkle with the almond mixture.  Return to oven and bake until pears are tender and crumbs are browned about 15 minutes.. Top with a little yogurt and some fresh berries.   Serves 4

 

 

Mary Rose Herb Farm Bruschetta Chicken on the Grill

 

6 boneless chicken halves

1 medium tomato finely chopped

2 T balsamic vinegar

2 cloves garlic minced

1 T olive oil

1/2 C shredded mozzarella cheese

1/4 C chopped fresh basil

Marinade chicken in the vinegar, oil, garlic.. Refrigerate 10 minutes.. Grill chicken on barbecue.. Meanwhile combine tomatoes, cheese, basil and remaining 2 T of dressing..  when chicken is done.. top evenly with tomato mixture .. serve when tomato mixture is heated through and cheese melted...

A farm favorite

Breakfast Sausage  Italian style

1 lb ground pork

1/2 lb of ground lamb

2 T fresh chopped cilantro

1T minced garlic

1T Dijon mustard

1/2 t fennel seed

1 t sea salt

1 t pepper

Mix all ingredients. Form into 1/2 inch patties. This should make 16..  Sauté in 1/2 C olive oil for 2 minutes each side.  Place on baking tray and cook in 400 degree over for 15 minutes.  Serve with any type eggs or omelets..

 

Sweet Spicy Red Curry Shrimp

 

1 packet of Red Curry Paste ( can be bought in an international grocery)

1/2 C brown sugar

1 t each of onion powder, garlic powder, dried basil

1/2 Cup of Thai Coconut Milk

1 pound extra large shrimp (16-20)

In a saucepan add red curry paste, sugar, onion powder, garlic powder, basil and coconut milk. Simmer until curry is dissolved and ingredients are mixed.  Cool in the refrigerator.

While sauce is cooling.. peel and devein shrimp. Pour half of marinade sauce over the shrimp.. Marinade 1 hour.. Reserve remaining sauce. 

Preheat grill to medium high.. thread shrimp on bamboo skewers (head to tail)  Grill each side about 3-4 minutes or until opaque.  Garnish the remaining sauce with fresh cilantro chopped.. use as a dipping sauce...

Summer Vegetarian Black Bean, Lettuce, Tomato on Bagel Sandwich

1 Can (15 ounces of your favorite Black Beans drained and rinsed (ours is GOYA brand)

1/3 C of salsa-

1/4 t cumin or chili powder

4 Bagels

Lettuce

Fresh Tomato

In food processor process beans, salsa, and cumin.  Spread about 1/4 cup on a bagel- add lettuce tomato and lettuce.. a vegetarian BLT

 

 

It is Corn on the Cob Time!

Special Corn Butters

Nothing like grilled corn.. Husk corn dip in extra virgin olive oil and grill...

3 chopped Serrano and 1 jalapeño pepper- stemmed and finely chopped with seeds

1/2 C local Honey

8 ounces of butter

Cook the chilies and honey until the mixture boils.. Remove from heat add the butter.  Puree the mixture in your blender or with an immersion blender.

Cheese Herbal Butter

8 ounces of butter

1/4 C fresh grated asagio cheese ( you may use Romano or parmesan)

2 T fresh oregano

2 large pieces of sun dried tomatoes in olive oil chopped

Mix all ingredients in a food processor... yummy! on bread or veggies

 

 

Eggplant Casserole

 

2 Large Fresh Tomatoes 1/2 inch slices

1/4 t salt

2 eggplants (1 1/2 lbs) cut into 1/2 inch slices

1/4 C seasoned bread crumbs

3/4 t fresh oregano

3/4 t fresh basil

2 cloves garlic minced

3/4 C half & half non fat

1 C mozzarella cheese

1/2 C fresh parmesan cheese

Slice tomatoes place on layer of paper towels.. salt- Let stand 30 minutes until moisture is removed

Coat eggplant with olive oil and place on baking sheet Broil 5 minutes on each side..

Place bread crumbs in the bottom of 9 x 13 casserole dish.. Make layers of tomatoes and eggplant.

Cover casserole with half & half ... Cover with cheese. Cover casserole with foil bake at 350 for 30 minutes...

Mary Rose Fiesta Omelets

3/4 C medium salsa

1 C artichoke hearts

1/4 C grated fresh parmesan cheese

1 C shredded Monterrey jack cheese

1 C shredded sharp cheddar cheese

6 eggs

1 8 0z carton sour cream

Grease 10 quiche dish.  Spread salsa in the bottom.  Distribute hearts evenly over salsa  Sprinkle parmesan cheese over the artichokes.  Sprinkle Monterrey jack and cheddar cheese over all.  Place eggs in blender blend until smooth add sour cream Blend well.. Pour over the cheeses... Bake uncovered in oven 30-40 minutes or until set..

Great served with avocados chopped ...

 

Oven Breakfast Omelet

 

 10 large fresh eggs

1-1/2 Cups of milk

1/2 cup of half and half

2 Cups each of shredded cheddar-mozzarella Monterey jack cheeses

1/3 C flour

1/2 t black pepper

1/4 t mustard

3 green onions finely chopped

Optional mushrooms, asparagus ham, sausage, bacon, green pepper, banana pepper

I use 1/2 C cubed white sharp cheddar from Tillamook cheese  the best!

Preheat oven to 375

In large bowl combine cheeses with flour and other ingredients.  Spread evenly in a 9 x13 inch pan.. In bowl whisk other ingredients until well blended .  Pour over cheese ingredients. liquid should cover cheese mixture.  Let stand 5 minutes.. Place in oven and cook for 45 minutes (until set in center)

Serve with diced tomatoes, combined with chopped fresh parsley..

Mary Rose Herb Farm Potato Soup

4 Cups of Peeled and diced potatoes                        Salt & Pepper to taste

2/3 C diced celery                                                     5 T butter

1/3 C diced onion                                                      5 T all purpose flour

1/3 C diced carrots                                                    3 Cups of non fat milk

4 Cups of water

2 1/2 T Chicken powdered bouillon granules

Combine the potatoes, celery, onion, carrot, ham and the water in a stockpot.. Bring to a boil , cook over low heat until potatoes are tender (about 15 minutes)  Add the chicken bouillon and salt pepper.

In a separate saucepan melt the butter over medium heat.. Whisk in flour with a fork, and cook constantly until thick (about 1 minute)  Slowly stir in milk as not to allow lumps. Constantly stir until thick (about 5 minutes)

Stir the milk mixture into the stockpot and cook soup until heated thoroughly.  Serve immediately   Garnish with fresh parsley or shredded cheese.

Thai Easy Chicken Pizza

1 12 inch pre baked pizza crust

1 (7 ounce) jar of peanut sauce

1/4  peanut butter

8 ounces cooked chicken breast (boneless, skinless) cut into strips.

1 Cup Italian shredded cheese blend

1 bunch of green onions'1/2 C fresh bean sprouts

1/2 cup shredded carrot

1 T roasted chopped peanuts.

Preheat oven to 400 degrees.

Stir together the peanut butter, sauce .  Spread over the pizza Arrange chicken on top.. Sprinkle with green onions, and cheese.  Bake 8-12 minutes until cheese is melted and bubbly.  Top with bean sprouts, carrot shreds, and peanuts.  Yields 8 pieces

Breakfast Cornbread Waffles

Waffles

1 box Corn Muffin Mix (we use Jiffy)

1 egg

2 T olive oil

3/4 Cup non fat milk

Mix all together and bake on hot waffle iron about 6 minutes  per waffle.. Remove waffles to a wire cookie rack to cool.. Makes 8 waffles

Topping

1 pound ground turkey meat or very lean ground beef

1/2 C chopped onion

2 T taco seasoning mix (we make our own using cumin, chili powder, and red pepper flakes)

1 Can Ranch style beans or chili beans  untrained

1 (10 ounce can ) Ro-tel tomatoes undrained

1 -1/2 Cups of cheddar cheese

4 green onions chopped including tops

Sour Cream for garnish

Heat skillet over medium heat, add onions -- stir and cook until tender--Add meat (turkey or ground beef) and taco seasoning to onions; cook about 5 minutes. Add beans, rotel tomatoes.. reduce heat and simmer 5 minutes. Spoon mixture on top of cornbread waffles and sprinkle with cheddar cheese, green onions and a little sour cream... EASY breakfast for a crowd or supper

It is Soup time

Split Pea Soup

2 Cups dried split peas                                   3 T dill weed

2 Cups of Chicken Broth                                  1/2 t black pepper

2 small ham hocks                                            2 T chicken bouillon

1 onion chopped fine                                        2 T soy sauce

1 Carrot shredded                                         1/2 t crushed red pepper flakes

2 potatoes peeled and diced                               2 Cups non fat milk

1/2 t Hot sauce

 

In a large stock pot add split peas, chicken broth, water, hot pepper sauce, ham hocks, chopped onion, diced potatoes, dill weed, pepper, chicken bouillion,soy sauce, and red pepper flakes... bring to a boil.. Reduce heat and simmer for 1 1/2 hours stirring occasionally.  Remove ham hocks, and trim off fat, cut lean ham into small pieces and return to stock pot. Simmer soups for additional 15 minutes.  Remove 6 Cups of soup and puree in a food processor or blender and return to pt. Stir in milk and heat thoroughly.. Serves 16

Grandma's Breakfast Delight

1 tube refrigerated crescent rolls

2 Cups of cubed fully cooked Kentucky ham

5 Large fresh eggs

1/2 C non fat milk

Dash freshly ground pepper

Dash of fresh dill

2 Cups of small cubed potatoes (you may use frozen has browns)

1 -1/2 Cups of mixture of Shredded  Cheddar- Swiss- provolone cheese

Arrange the rolls on the bottom of a 13 X 8 x 2 inch baking pan. Place the chopped ham on top of the crescent rolls..

Beat the eggs, milk and pepper and herbs .. set aside.  Layer the potatoes or has browns over the ham; then pour the egg mixture over the potatoes and top with the cheeses.  Bake at 375 for 30 minutes   serves 8

I have also added bell peppers, onions, pepperoni, sausage, bacon, Canadian bacon ..

I serve this with Baked apples filled with sugar and cinnamon and apricot preserves..

Turkey Burgers with Cranberry Ketchup and Greek Cole Slaw

we prepare our turkey burgers just like we do our hamburgers for the grill.. If in a hurry you may use the Frozen turkey burgers

Cranberry Ketchup

1 (16 ounce) can whole -berry cranberries

2 T stevia

1/3 C apple cider vinegar

1/2 t cinnamon

1/2 t pepper

1/4 t allspice

Combine all ingredients in a saucepan and bring to a boil.. Reduce heat and simmer uncovered until mixture is slightly thickened.. Stir often.. Takes about 10 minutes

Store in a airtight container in the refrigerator will keep 2 weeks. YUMMY on chicken-burgers, pork...

Mary Rose Herb Farm Greek SLAW

1 head of cabbage grated.( you may use a 8 ounce package of Cole slaw mixture if in a hurry)

7 green onions chopped

2/3 C olive oil

1/4 C white vinegar

1/4 C water

2  Large cloves of garlic minced

1/2 t salt

2 t fresh ground pepper

fresh basil, oregano, marjoram, fennel

add 8 ounces of fresh feta cheese

Toss cabbage and green onions in a bowl set aside.. In a small bowl whisk the vinegar into the oil; add water, garlic salt and add pepper, until well blended... add to slaw mixture add feta cheese and refrigerate at least 2 hours to allow the flavors to meld.. serve chilled

 

Zucchini Mexican Cakes

 

4 C Zucchini Squash grated

3 eggs

1 C fresh corn

1/4 C Fresh Green Onion

1 Jalapeño

1/3 C fresh grated Parmesan cheese

1/2 C Mozzarella Cheese Grated

1/2 C flour

2 T olive oil

Makes 10 patties

Grate squash and drain in a colander.. Mix all ingredients  add grated squash.  Heat the 2 T olive oil in a cast iron skillet.. Let the patty brown well before turning.. When well browned serve with fresh salsa and sour cream   Delicious!  even my squash haters love this one

 

Greek Chicken Penne

1 -16 ounce package  Penne

1 1/2 T olive oil

1/2 cup green onion

3 cloves of garlic minced

1 lb of left over roasted chicken or 4 chicken breasts

1 -14 ounce can of artichoke hearts

1 large fresh tomato

1/2 C feta cheese

3 T Chopped fresh parsley or cilantro

2 T lemon juice'

2 t fresh oregano

ground pepper to taste

Cut Penne pasta until al dente.   Drain.  Meanwhile in a skillet over medium heat combine olive oil, onion, and garlic cook for 2 minutes . Add chopped chicken and continue cooking about 6 minutes.. Reduce heat to low add chopped drained artichokes, chopped tomatoes, feta cheese, fresh parsley, lemon juice and fresh oregano add drained penne pasta to the skillet.. Cook until heated about3 minutes.. Season ground pepper.. You might want add some parmesan cheese .. Yummy! Serves 4

 

 

Fresh Strawberry Stuffed French Toast

8 ounces of Low fat cream cheese

3/4 C of sliced strawberries

Sara Lee's Cinnamon Bread

Combine

1 C brown sugar

2T Light corn syrup

1/2 C butter

Cook over a medium heat until thickened, stirring constantly.  Pour into the 9 by 13 inch glass baking dish.  Sprinkle with 1 Cup of chopped pecans.  Place one layer of the cream cheese  cinnamon bread  in a 1 layer.  Top with strawberries. 

Combine 6 eggs

1 1/2 Cups of non fat milk

1 t pure vanilla extract

Pour half of this mixture over the first layer.  Place a second layer of the cream cheese cinnamon bread on top of the strawberries and cover with remaining egg mixture.  Cover with plastic wrap and refrigerate overnight.  Sprinkle with cinnamon, nutmeg and sugar, and bake uncovered for 60 minutes at 350 degrees. Each person is served 1 double layer serving..

 

Mushroom Stroganoff

1 pound mushrooms sliced. (you may use a mixture of fresh mushrooms) 6 ounces of noodles uncooked. (you may use  egg noodles with egg or whole wheat noodles)
1 T olive oil 1 Cup of non fat sour cream
1 C onion, chopped 1 t dried, or 3 t fresh, dill weed
1 quart of no salt tomato juice Fresh ground pepper to taste
2 t Worcestershire sauce  

Sauté mushrooms and onions in olive oil until just browned.  Stir in tomato juice, pepper and Worcestershire sauce

Bring to a low boil.  Add noodles.  Reduce the heat, cover and simmer about 20 minutes, stirring occasionally until noodles are tender. Stir in remaining ingredients and heat thoroughly.  I have added carrots, or asparagus and even fresh spinach.. Delicious!!!

Baked Classic Ziti

2 1/2 pounds of ground turkey

1 cup onion, chopped

1 cloves garlic minced

2- 30 ounce jars of your favorite spaghetti sauce (marina sauce) or homemade

1 Cup of chicken broth

1 t fresh oregano or 2 t of dried oregano

2 cups of Low fat mozzarella cheese shredded

1 Cup of Parmesan cheese

16 ounces of ziti macaroni  cook uncovered 8 minutes and then drain

 

In large skillet , brown turkey meat , onion and garlic until brown. Stir in your favorite spaghetti sauce, chicken broth and oregano.  Reduce heat and simmer 10 minutes.  Stir 2 Cups of the meat sauce into the ziti.  Spoon half of ziti mixture into a baking dish.  Sprinkle with 1 -1/2 cups of mozzarella cheese and 1/2 Cup of parmesan .  Top with 1/2 of the remaining meat sauce, remaining ziti, and remaining sauce.   Cover and bake at 350 degrees for 20 minutes.  Sprinkle with remaining cheeses and bake uncovered for an additional 10 minutes.. Makes 8-10 servings..
