FALL CRANBERRY SALAD

EASY & DELICIOUS

1 C CRANBERRIES DRIED

4 OUNCES OF FETA CHEESE  CRUMBLED

1/2 C WALNUTS

2 T BALSAMIC VINEGAR

1 T HONEY

1 t DIJON MUSTARD

1/4 C OLIVE OIL

1/2 T GROUND BLACK PEPPER

SALAD GREENS  WE USE ROMAINE OR SPINACH

LAYER THE GREENS WITH CRANBERRIES AND FETA CHEESE AND WALNUTS IN SALAD BOWL. WHISK VINEGAR, HONEY, MUSTARD AND PEPPER IN SMALL BOWL.  TOSS OVER SALAD AND SERVE IMMEDIATELY

Corn and Pepper Salad

 

6 ears of corn on the cob   husked.

1 red bell pepper

1 green bell pepper

1 orange bell pepper

all peppers seeded and cut into 1/4 slices dices

3 green onions finely chopped

1 clove of garlic peeled and minced

2 t Dijon mustard

Freshly all colored pepper corns (red white and black)

1/2 t chili powder

1/4 t Hungarian paprika

1/2 t fresh ground red peppers

1/2 c cayenne peppers

1/4 c olive oil

1/4 cup of fresh chopped cilantro

2 T fresh oregano may be added

Cut corn off cob -- cook in a small amount of water in saucepan.  Bring to a boil cook approx 5 minutes  Drain and cool

Add corn, and all peppers and onions in a small bowl  set aside.

Whisk remaining ingredients and slowly add olive oil whisking until smooth. 

Add vegetables to the dressing and add fresh cilantro and oregano..

Delicious salad..

 

 

 

 

Fresh Tomato Salad with Pita

Salad

 6 Cups shredded romaine lettuce

3-4 medium fresh tomatoes cubed

1 cucumber peeled and sliced thinly

2 whole pita breads  toasted in the oven for 10 minutes @ 400 degrees  Break into bite size pieces.

Dressing

4 T chopped fresh cilantro

2 T grated lemon rind

2 T chopped fresh mint

1 cup sliced (thinly) green onions

1 T extra virgin oil

1/4 t salt

Combine all ingredients and let stand at least 2 hours.. When ready to serve add pita chips to salad mixture and toss with dressing.

Asian Apple Slaw

 

1/2 C low fat mayo

1 T soy sauce

2 t sugar

1 t apple cider vinegar

1/2 t ground ginger

2 green onions sliced

1 Granny smith apple cut into 1/8 by 1/8 -- 3 inch strips.

1 Package of coleslaw mix or 1/2 head of cabbage grated.

Toss slaw mix well with all ingredients - chill and serve .. Keeps well

Stuffed Tomatoes with Mediterranean Tuna Salad

a new summer favorite

Salad Ingredients

1/8 head romaine lettuce chopped

2 ounces feta cheese crumbled

1/2 small onion ( you may use red or green onion)

1/2 yellow pepper ( you may use green red or orange)

1 -- 6 ounce can of solid white tuna packed in water and drained

1/8 C capers or to taste.

 

Dressing Ingredients

1 T lemon juice

1/2 T Dijon mustard

1/2 T tarragon fresh minced

1/8 t fresh ground pepper

Directions

mix all salad ingredients and toss with dressing.. Core your garden tomatoes and fill with salad makings. Chill!  Or you may serve on a plate with sliced tomato wedges..

 

Banana Poppy Seed Dressing

1 ripe banana   

1 Cup (8 ounces) non fat sour cream

1 T poppy seeds

1 t stevia

1 T fresh lemon juice

1 t dry mustard

In a blender, place banana, sour cream, poppy seeds, stevia, lemon juice, and mustard.

Blend until smooth.. Chill for at least 1 hour..

This is an excellent dressings for greens and fruit.. Makes 1 3/4 Cups..
